Pound cake is one of my favorite things in this world
My grandmother made the best pound cake ever
Lemon is delicious of course, but I've been craving the classic
And all I ever find anywhere is lemon
Need to make it myself one of these days
 
Pound cake is one of my favorite things in this world
I stand with you.

I love using slabs of it as a substitute for the shortcake in strawberry shortcake.

I use a pipette to soak the slab with half-and-half until it weighs 2 lbs and cannot absorb any more. I use half-and-half because pound cake will not absorb heavy cream.

Heavy cream is saved for the drizzle over the small tower of sugared berry slices.

It turns something light and airy into something with weight. A dessert to knock you back.

And with the strawberries being sliced on the mandoline, the thinness of the slices means greatest surface area for juice extraction during sugar resting. A syrup is produced which mixes with the heavy cream drizzle when it too is drizzled.

The pound cake takes it to another level. The texture of the infused cake with the dissolving paper-thin strawberry slices becomes velvety because of the high butterfat.

A not so simple pleasure, well worth enjoying, and sharing with others.
